Copper River Salmon: Short Season, Great Taste

CHICAGO (CBS) ― There is nothing fishy about this edition of Table for 2 – literally or figuratively. If you are an ichthyophile, you know that in late June, we are in the very short three to four-week season for fresh copper river salmon.

Copper river salmon has a whole lot of heart-healthy omega-3 oils, it has what is called a richer, or nuttier taste.

Scott Barrow of Devon Chicago, at 39 E. Chicago Ave., joined CBS 2's Vince Gerasole to prepare some fresh copper river salmon, with a potato sage gratin, a mustard vinaigrette, and a creamy leek fondue.
