Mini-Easter Cheesecakes

  Mini Easter Cheesecakes

• 1 ½ cup Oreo cookies, crushed
• 1 bag Speckled Milk Chocolate Eggs 
• 12 chocolate or vanilla wafer cookies 
• 1 container of premade Cheesecake filling (sold next to cream cheese in the dairy section of grocery) 
• 2-3 cups flaked coconut 
• Green food coloring 
• Muffin pan 
• Muffin liners

Line muffin pan with paper muffin cups. Place one wafer cookie in the bottom of each cup, set aside. Mix cheesecake filling and crushed Oreos.
Spoon mixture into muffin cups and bake in a preheated 375º oven until set, about 18 minutes. Cool completely and refrigerate until ready to serve.

To serve: Combine coconut with a few drops of food coloring to desired shade of green. Sprinkle desired amount of coconut on cheesecakes. Place 4-5 speckled chocolate eggs on top of cheesecakes. Refrigerate until ready to serve.

Makes 12 mini cheesecakes.
