Cookie Recipes From Hot Chocolate
Simple Holiday Sugar Cookie Dough
12 oz. unsalted butter (room temperature)
8 oz. granulated sugar
3 eggs (room temperature)
1 lb. 5 oz. all purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. vanilla extract
Cream butter and sugar with paddle attachment until light and fluffy; add eggs one at a time, incorporating each into butter and sugar mixture. Scrape bowl; add all dry ingredients, incorporate well. Scrape bowl again. Wrap dough in plastic wrap; refrigerate to set (about 2 hours or overnight). Roll out dough and bake in desired shape.
Pistachio Shortbread & Raspberry Preserve Cookies 1 lb. unsalted butter cut into 1/4" cubes (cold)
1 C. granulated sugar
4 C. all purpose flour
1/2 C. chopped pistachios (very fine, powder like)
1/4 tsp. salt
1 C. raspberry preserves
In a bowl with a paddle attachment, on low speed, work all dry ingredients until the dough comes together. Place dough on your work surface and bring together into one mass. Divide dough into 8 pieces. Line a sheet pan with parchment paper. Roll each piece of dough about 1/8" thick and place on a sheet pan. Spread with a very thin layer of raspberry preserves. Keep stacking with the dough and preserves ending with the dough. Wrap with plastic wrap and refrigerate until set (about 2 hours or overnight).
To bake, preheat oven to 300 degrees. Line a sheet pan with parchment paper and spray with pan spray. Cut dough into desired shape and bake until set (about 10-15 minutes).
Salted Pecan Nutball Snowman (pictured)
8 oz. unsalted butter
6 oz. granulated sugar
2 C. ground salted pecans
2 C. all purpose flour
1/4 tsp. salt
Powder sugar for coating
Melted chocolate for stacking snowmen
Cream butter and sugar in a bowl with a paddle attachment, scrape bowl, add pecans, flour and salt. Mix and combine. Let set in refrigerator about one hour. To bake balls, preheat oven to 350 degrees, scoop dough into 3 "graduated" sizes and bake until golden brown. Let cool, toss baked balls in powder sugar. Place a dot of melted chocolate on the bottom and the middle of the bodies of the snowman and stack.
