Heaven On Seven
Makes 16 Skewers:
At Heaven on Seven, we go to great lengths to produce our own Worcestershire sauce. But since that takes lots of ingredients and more hours that most people have, we set off to turn store-bought Worcestershire into something great, something delicious
something well, heavenly. The sauce we spoon over these wonderful beef tenderloin skewers will make you believe in heaven, too.
HEAVENLY WORCESTERSHIRE
1 cup plus 2 tablespoons Worcestershire sauce
1/2 cup molasses
1/4 cup dark corn syrup
2 tablespoons honey
1/4 cup water
1 tablespoon freshly squeezed lemon juice
1 tablespoon white vinegar
2 pounds beef tenderloin, cut into 1/2 inch cubes
Angel Dust seasoning blend
Extra-virgin olive oil, for brushing
TO MAKE THE SAUCE, combine all the ingredients in a saucepan and boil over medium-high heat until the mixture becomes syrupy, about 8 minutes.
PREPARE A GRILL for cooking over medium-high heat.
THREAD THE BEEF CUBES onto 16 skewers, 3 per skewer. Season with Heaven on Seven Angel Dust seasoning mix and brush lightly with olive oil. Grill until lightly charred, 4 to 6 minutes. Drizzle with the Worcestershire sauce and serve warm.
