Back to School Banana Nut Muffins

  Back to School Banana Nut Muffins:

1 package Gluten Free Muffin Mix
1/4 cup cup oil
1/2 cup water
2 smashed bananas
2 eggs
1 tablespoon Vanilla
1/2 cup cherry vanilla granola (or low fat granola of your choice)

Preheat oven to 400 degrees. Take oil, water, smashed bananas, eggs, vanilla and mix thoroughly. Add Muffin Mix and incorporate until just combined. Spray muffin tins with spray oil. Pour into muffin cup about 3/4 to the top. Sprinkle granola on top and bake for 10-12 minutes.

Fun Add Ins:
*Walnuts & Cinnamon
*Cranberries & Chopped Apricots
*Dried Apples & Raisins

Makes 12 muffins.
