Caribbean Cinnamon Banana Bread

Ingredients
1 cup mashed bananas
2 T melted butter
1 tsp. ground cinnamon
1 box Market Day Gourmet Bistro Quick Bread
1 tsp. lemon juice
12 oz. sparkling apple juice
1 cup chopped walnuts or almonds

Preparation
Preheat oven to 375°F. Lightly grease 9x5 loaf pan. Blend MDG Bistro Quick Bread, nuts, and cinnamon together. Combine apple juice, bananas, and lemon juice, adding to Bistro Quick Bread mix. Firmly fold together for 20 to 30 seconds. Spread butter into pan, filling corners. Batter should be lumpy. Bake at 375°F for 50 to 55 minutes. Serve straight out of the oven or let cool completely before slicing.


Mucho Mojito Chicken Saute

Ingredients
1 bottle Market Day Gourmet Mucho Mojito Marinade
1 T Oil
4 Chicken breasts(Marinade)

Preparation
Marinade chicken breasts in MDG Mucho Mojito Marinade for at least 20 minutes. Heat oil in a large skillet over medium high heat. Brown chicken for 2 - 3 minutes, then reduce heat to low. Cover and saute for 8 - 10 minutes or until cooked through and juices run clear. Remove chicken from skillet. Drizzle chicken breasts with MDG Mucho Mojito Marinade before serving. Serve with black beans and spanish rice.

Option: Place cubed chicken on skewers and broil on high for 4 minutes. Turn over and cook an additional 3-4 minutes until done.


Creamy Coconut Fruit Salad

Ingredients
2 Tablespoons sugar
8 lettuce leaves
1/4 cup toasted chopped walnuts
1 package Market Day Gourmet Cheeseball in Paradise
8 cups Fresh fruit of your choice (bite size pieces)
1 8 oz. carton of plain low-fat yogurt

Preparation
Combine yogurt, sugar, and Cheeseball in Paradise mix. Cover and chill dressing for 2 hours. Serve on salad plate lined with lettuce; arrange fruit and walnuts on top and drizzle with dressing. Top with toasted coconuts. Makes 8 servings.


Mojitos

Ingredients
1 pkg. Market Day Gourmet Key Lime Mint Fizzy
2 cups fresh mint
4 limes(sliced)
2 cups rum
3 tablespoons Market Day Gourmet Mojito Rimming Sugar
1 qt. (4 cups) sparkling water

Preparation
Combine MDG Key Lime Mint Fizzy and water in a large glass pitcher. Muddle mint, lime and rum. Strain rum mixture; add to Key Lime Mint Fizzy. Rim glasses with lime then dip glasses in MDG Mojito Rimming Sugar. Serve drink over ice.
