Book Offers Ways To Eat Healthier, Be Green

PHILADELPHIA (CBS) ― Bestselling author Mark Bittman says he lost 30 pounds by cutting out food that is bad for him as well as bad for the environment, reports CBS station KYW-TV.

Mark Bittman says his book titled, Food Matters, isn't a diet.

"This is more of a lifestyle change," said Bittman, a change that starts with what you put in your mouth.

By reducing the amount of processed foods and meat in his diet, he lost 30 pounds.

The same approach worked for Sharon Muraresku, who lost 105 pounds.

"Minimal meat, just healthy meat, turkey, ground turkey, with no fat. Ground meat, very little in moderation. A lot of vegetables and rice," said Muraresku.

Whole grains and vegetables are more filling because it takes longer for the body to break them down.

"A third of the food that we eat is non-nutritive," said Bittman. "You're spending money on junk. You're really throwing it away."

The same foods that Bittman says were helping him pack on the pounds are also taking their toll on the environment. He explains meat production is actually contributing to global warming.

"18 percent of greenhouse gases can be directly attributed to industrialized livestock," said Bittman.

The waste animals produce, along with the grain used to raise them, take a toll on the environment.

Bittman believes considering the health of the earth, in addition to your own, is enough motivation to make a change.

"If people consider all of those things and then look at the chips versus the apple, maybe the decision becomes a little easier," said Bittman.

Mark says consider more than just fat and calories. It's also about how much nutritional value you're getting.
