4-Star Treatment For Your Thanksgiving Leftovers

Ideas To Keep The Gourmet Feast Going

CHICAGO (CBS) ― Most fridges are packed with leftovers after Thanksgiving, and as CBS 2's Vince Gerasole reports, the food fun doesn't have to end Thursday night. There are plenty of creative ways to keep the feast going.

If you think your dinner was a big production, the tony Peninsula Hotel featured two types of turkeys; mashed potatoes topped with truffle shavings; and thinly shaved sweet potatoes cooked with sour cream, maple syrup and pecans.

Executive Chef Terry Crandall admits, "It's pretty fancy." But Crandall has some simple encouragement for us when it comes to making the most of turkey leftovers.

"Take some traditional dishes that would be prepared with chicken and use turkey instead," he said. "Turkey is fantastic in a casserole or pot pie."

"Typically we make a casserole out of it at home," Crandall said. "It's layered with stuffing, turkey, a lot of the gravy, and then we bake it in the oven with bread crumbs on top."
